[English]
Grapes are one of the most important horticultural products in Iran, which plays an important role in the country's agricultural sector due to its economic, nutritional, and export value. Despite significant annual production, a significant portion of the product suffers from quality and quantity losses in the production chain stages from the vineyard to the consumer market. The high sensitivity of grapes to mechanical damage, moisture loss, and fungal contamination, especially gray rot caused by the fungus Botrytis cinereus, are among the most important factors in reducing the quality, quantity, and marketability of this product. A study of the factors of losses shows that most of the losses are caused by improper management in the stages of production, harvesting, pre-cooling, packaging, transportation, and storage. Using appropriate management methods in the vineyard, proper harvesting, rapid cooling, and compliance with the cold chain after harvesting, and the use of modern storage technologies can play an effective role in reducing losses. Technologies such as modified atmosphere packaging, edible and biodegradable coatings, irradiation, and intelligent systems based on artificial intelligence make it possible to increase the shelf life and maintain the quality of grapes. The results show that sustainably reducing grape waste requires an integrated approach across the entire production chain; an approach in which production chain management, modern post-harvest technologies, and intelligent quality monitoring are used synergistically. Implementing these solutions will not only increase producers' income, but will also reduce resource waste and improve production sustainability.
