[English]
Introduction: Minced meat has a special place in the food basket of Iranian households due to its high nutritional value and reasonable price and is one of the most consumed meat products. Due to the possibility of adding unauthorized tissues to reduce production costs, identifying these tissues with accurate methods is essential for food safety and health Objective: This study aimed to evaluate the frequency and diversity of unauthorized tissues in minced meat produced by industrial units in Tehran province and determining the most common unauthorized tissues using histology. Methods: In this descriptive cross-sectional study, 40 samples of minced meat were randomly collected from 10 industrial units producing minced meat in Tehran province (4 per unit). After fixation in 10% buffered formalin, routine histological procedures (dehydration, clearing, and paraffin embedding) and preparation of 6-µm sections, the samples were stained with hematoxylin-eosin. The sections were examined by light microscopy for the presence of gizzard, cartilage, bone, tendon/ligament, peritoneal adipose tissue, smooth muscle, and elastic connective tissue. Data were reported as absolute and percentage frequencies, and due to the limited sample size in each subgroup, inferential tests were avoided. Results: Out of 10 production units, 6 (60%) and of 40 samples, 15 (37.5%) had at least one unauthorized tissue. The highest frequency was related to gizzard tissue (6 samples,15%). Peritoneal adipose tissue, structures compatible with smooth muscle, and the simultaneous presence of gizzard and cartilage were observed in 2 samples (5%). Bone, cartilage, and tendon/ligament tissues were each identified in 1 sample (2.5%). Conclusion: More than one-third of industrially produced minced meat samples in Tehran province contained unauthorized tissues. Gizzard tissue was the most common unauthorized tissue, confirming the effectiveness of the histological method in identifying tissue adulteration. Periodic histological inspections by regulatory agencies and routine testing by manufacturing plants are recommended.
