چکیده
خشک کردن به عنوان یکی از قدیمی ترین شیوه های محافظت از مواد غذایی در برابر فساد شناخته می شود که بشر برای افزایش ماندگاری آن از گذشته های دور بکار گرفته است. امروزه خشک کردن نه تنها در افزایش عمر ماندگاری بلکه برای ایجاد تنوع در محصولات غذایی دریایی و ایجاد ارزش افزوده مطرح می باشد که میزان دسترسی افراد حتی در نواحی دور از ساحل را به این منبع مغذی توسعه می بخشد.
ماهی موتو (آنچوی) از جمله گونه های فراوان، ارزان و با اهمیت اکولوژیکی و تغذیه ای در خلیج فارس بخصوص سواحل قشم می باشد که برای تولید محصولات خشک پتانسیل بالایی دارد. بر طبق مطالعات صورت گرفته ماهی آنچوی حاوی مقادیر بالایی پروتئین، مواد معدنی ارزشمند نظیر کلسیم، آهن و ید و چربی (چند غیر اشباع) متعادل می باشد.
در این مقاله سعی گردید تولید سنتی و صنعتی ماهی خشک از ماهی آنچوی، روش های نگهداری و نحوه مصرف آن با توجه به منابع علمی و نیز تجربیات میدانی شرح داده شود. تولید این محصول به این دلیل که ارزش تغذیه ای بالایی دارد و هزینه مواد اولیه و فرایند آن به نسبت پایین است از پتانسیل بسیار خوبی برای افزایش سرانه مصرف آبزیان در ایران برخوردار است. با انتخاب ماهی خشک آنچوی تولید شده به روش صنعتی و رعایت نکات ایمنی در خرید و مصرف، می توان گامی مؤثر در جهت تنوع بخشی به سبد غذایی، تأمین پروتئین و ریزمغذی های ضروری و حمایت از تولید داخلی برداشت.
The Potential of Dried Anchovy in Enhancing Food Security: A Healthy Snack to a Nutritious Food

Drying is recognized as one of the oldest methods of preserving food against spoilage and has been used since ancient times to extend the shelf life of food products. Today, drying is valued not only for increasing shelf life but also for diversifying seafood products and adding value, thereby improving access to these nutritious foods, even for people living in areas far from the coast.
Anchovy (locally known as Moto fish) is one of the most abundant, inexpensive, and nutritionally important fish species in the Persian Gulf, particularly along the coasts of Qeshm Island, with great potential for the production of dried fish products. According to previous studies, anchovy is a rich source of protein, valuable minerals such as calcium, iron, and iodine, and contains moderate amounts of polyunsaturated fatty acids.
This article describes the traditional and industrial production of dried anchovy, its storage methods, and its consumption patterns based on scientific literature as well as field observations. Owing to its high nutritional value and the relatively low cost of raw materials and processing, this product has considerable potential to increase seafood consumption in Iran. By choosing industrially produced dried anchovy and observing safety tips in purchasing and consumption, an effective step can be taken toward diversifying the food basket, supplying essential protein and micronutrients, and supporting domestic production.
